Zucchini Parmesan Muffins
4C HomeStyle Shredded Parmesan/Romano Cheese
1 teaspoon olive oil
1/2 cup grated zucchini, excess liquid squeezed out
1 cup flour
1 teaspoon baking powder
1/4 cup vegetable oil
1 cup milk
2 eggs, lightly beaten
1/3 cup grated cheddar cheese
1/4 cup 4C Homestyle Shredded Parmesan/Romano Cheese
Preheat oven to 350 degrees and grease a muffin pan.
Combine flour and baking powder in a bowl. Add the oil, milk and egg. Mix well. Fold in zucchini and two cheeses.
Spoon mixture into muffin pan and bake for 18-20 minutes or until golden. Leave in pan for 5 minutes then transfer to a wire rack to cool.
