Zucchini Blossoms (Frittelle di Fiori di Zucca)
4C Plain Panko Bread Crumbs
1/2 cup flour
1/2 cup 4C Plain Panko [or 4C Gluten Free Plain Crumbs]
2 egg whites
6 zucchini blossoms
1/4 cup goat cheese
a bit of lemon juice
Set up three small bowls: flour, egg whites and panko crumbs.
Meanwhile, start heating your pan with the extra virgin olive oil and the butter.
Open the blossoms and using a small spoon place a dollop of the goat cheese in the center. Gently twist to close. Dredge in the flour, egg white and panko.
When the pan is hot enough, place the zucchini blossoms into the pan. Sauté on each side for about two minutes. Turn when they are golden brown.
Place in dish, squeeze with lemon juice.
This recipe is for one person – add more of the flour, egg white and 4C Plain Panko to accommodate additional servings. Eat immediately – they get cold fast.
