Oven Roasted Asparagus
4C Plain Panko Bread Crumbs
2 tablespoons plain Greek yogurt
2 tablespoons mayonnaise
2 tablespoons Dijon mustard
1 teaspoon lemon juice
½ teaspoon salt
¼ teaspoon pepper
1 cup 4C Plain Panko Bread Crumbs (or substitute 4C Gluten Free Plain Crumbs]
2 tablespoons olive oil
1 pound thick asparagus
Preheat the oven to 450 degrees F.
Grease a large baking sheet.
Whisk together yogurt, mayo, mustard, lemon juice, salt and pepper in plate.
Place B4C Bread Crumbs on another plate.
Roll asparagus in yogurt mixture, then Crumbs so spears are well breaded. Place on baking sheet. .
Drizzle asparagus with the olive oil.
Roast asparagus, turning halfway through, for 8-12 minutes, depending on thickness. The spears should be golden brown and tender but still have some bite.
